Mid-February....Mojave Desert.....camped in my little trailer halfway up a hill in the Joshua tree forest.

My recipe called for searing chicken thighs in the cast iron Dutch oven. That would happen later in the day......but it did not specify which oil would do to grease the pot. I'd planned bacon for breakfast, and though I wouldn't need the pot until afternoon for the chicken, it would do to crisp the bacon. The Dutch oven's legs straddled one of the propane burners atop my stove, with thick sliced bacon sizzling and popping within. I separated the strips with a fork. Once crisp and brown I fished em out and let paper towels on the plate absorb some of the drippings. I left the rest of this fragrant oil in the iron pot.

The aroma of frying bacon had quickly filled the small trailer. It was soon joined in there by the warm light of a sunrise spilling over the dark ridge to the southeast, pouring through the window above the sink. Through the windows the ghostly apparitions of yucca and Joshua trees surrounding us emerged from their gray predawn cloak as daybreak transformed our surroundings.

"Is that bacon?"

"Yep."

"Oh man, I love bacon." ...
